Easy Roast Beef Sliders
We’re gearing up for Big Game season, which means dusting off all of our favorite party foods.
You know the ones–they’re hot, they’re savory, and they’re perfect for stress eating, celebrating, or drowning your sorrows after a tough loss.
We’re talking favorites like Hot Reuben Dip, Meat Candy, and Velveeta Sausage Dip–the kinds of recipes you bring to a potluck if you want to be the star of the gathering.
One of our go-to party recipes is hot and cheesy Pulled Beef Sliders. We make them with leftover Shredded Beef (which is FAB, by the way), but unfortunately we don’t always have leftover roast beef on hand, and sometimes you need sliders NOW, not 8 hours from now, ya know?
These Roast Beef Sliders are the answer to our most intense slider cravings. Made with deli sliced roast beef, these sliders can be prepped and in the oven in just 20 minutes, making them perfect for a quick weeknight dinner or a crowd pleasing appetizer.
With strings of melty cheese, a special sauce, and a little crunch, these sliders are over the top delicious!
What Makes These Sliders Special
This slider sauce is BOMB and so easy to make! Horseradish and lemon add brightness and punch to this creamy spread.
Hawaiian sweet rolls‘ squishy texture and subtle sweetness are the perfect compliment to the savory beef and cheese.
French fried onions add crunch and flavor!
Plus, these sliders are fast to prep, easy to double for a crowd, and are delicious served piping hot or at room temperature.
Key Ingredients:
Hawaiian rolls– We tested these with both Hawaiian rolls and a basic dinner roll (which is what you see pictured here). While both were good, the Hawaiian rolls were the clear winner.
Mayonnaise– There is a time and place for Miracle Whip. This is not that place.
Horseradish sauce– Tangy, nose tingling horseradish is a perfect pairing for beef. We love it with Prime Rib, and we love it on these roast beef sliders! Find this in the condiments section of your grocery store.
Lemon juice– Just a squeeze of lemon juice brightens up the sandwich spread.
Cheese– Our favorite cheese for these sliders is white cheddar, but we think white American, Swiss, and provolone cheese would also be great choices.
Roast beef- Grab some deli roast beef. We tried the beef sliced medium and thin, and we ended up preferring the thinner slices.
French fried onions– Add a little crunch and some onion flavor with French fried onions. Use any leftovers on these Loaded Slow Cooker Sloppy Joes.
Butter + Garlic– You have a couple options to top the slider buns. We opted for melted butter and garlic, but they’d also be wonderful brushed with Italian dressing.
How to Make Roast Beef Sliders
Step 1: Prep. Preheat the oven to 350 degrees. Line a baking pan with foil and spray with cooking spray.
Step 2: Slice rolls. Use a serrated knife to slice through the middle of the Hawaiian rolls and open them up as one unit.
Step 3: Make sandwich sauce. Mix together the mayonnaise, horseradish sauce, and lemon juice. Taste and season as needed with salt and pepper, adding more horseradish sauce or lemon if you prefer.
Step 4: Assemble sandwiches. Spread the mayonnaise mixture over both sides of the sliders. Top with the roast beef, followed by slices of Swiss cheese. Sprinkle with French fried onions. Sandwich with the top layer of the slider buns.
Step 5: Glaze rolls. Whisk together the melted butter and garlic clove then brush the mixture evenly over top of the buns.
Step 6: Bake. Cover the sliders with aluminum foil and bake for 15 minutes. Remove the foil and bake for another 6-9 minutes, or until cheese is melted and buns are golden brown on top.
Make Ahead and Storage Instructions
The roast beef sliders can be assembled up to 24 hours in advance and stored, wrapped in saran wrap, in the fridge. Unwrap sliders then bake as usual.
Store leftover sliders in the fridge in an airtight container or tightly wrapped in saran wrap.
Reheat sliders in the microwave for 45-60 seconds or crisp them in the air fryer for 6-8 minutes at 375 degrees.

We believe Hawaiian rolls are the undefeated champs in the slider department, but you can also use Brioche, everything, or classic dinner rolls for this recipe. Sister Shubert’s would be delicious!

What kind of cheese goes with roast beef?
We LOVE a sharp white cheddar with roast beef, but that’s certainly not your only option. We’ve served leftover pot roast sandwiches with Swiss Cheese and our Shredded Beef Sliders with provolone. We also have a Prime Rib Sandwich with white American cheese.
All that to say, cheese and beef are just really great together. Choose the cheese that speaks to your soul.
