They make a fun alternative to cereal or toast for breakfast, something a little bit different and packed with fibre too.
The first step is to add bananas, nutella, oats and mixed seeds to a large bowl and mix everything together.
If your bananas are very ripe you can add them straight to the bowl. If they are a little firm then mash them first then mix in with the other ingredients.
Nutella obviously contains nuts so if you want to make these nut free then use a nut-free chocolate spread.
Divide the mixture into 8 mounds on a lined baking sheet.
I find it easier to use an ice cream scoop to scoop out the mixture.
Use a spoon to flatten and shape into cookie shapes.
Add some chocolate chips to the top and bake in the oven for 15 minutes.
Allow the cookies to cool for a few minutes before serving as they will be very hot.
I like to serve them with greek yogurt and some fresh berries for a really filling breakfast.

2 bananas
70g nutella
150g oats
2 tbsp mixed seeds
15g chocolate chips

Instructions
Preheat the oven to 180c fan and line a baking tray with parchment paper.
Add the bananas, nutella, oats and seeds to a large bowl and mix well.
If your bananas are not very ripe then mash them first before adding to the bowl.
Add a large spoonful of the mixture to the baking tray, making 8 mounds in total.
Use a spoon to push the mixture down and form into a cookie shape.
Top with the chocolate chips and bake in the oven for 15 minutes.
Allow to cool for a few minutes before eating.
Notes
These cookies will keep for 2 days in the fridge and can be reheated in the microwave.
They can also be frozen for up to 8 weeks. Defrost at room temperature in a couple of hours and reheat as above.
