What Is Beef Tallow? The Ingredient Allegedly Found In Tirumala Laddu Ghee Samples
A controversy has erupted over the alleged use of beef tallow in the Tirupati laddu after the ruling Telugu Desam Party (TDP) claimed that the adulteration had been confirmed by a Gujarat-based livestock laboratory. TDP spokesperson Anam Venkata Ramana Reddy, during a press conference, displayed the lab report that allegedly confirmed the presence of "beef tallow" in the ghee sample. Beef tallow is described as "rendered fat derived from cuts of beef such as rump roast, ribs, and steaks". It can also be produced by "melting the pure fat skimmed off meat, turning it into a liquid that solidifies into a pliable substance when cooled, similar in texture to soft butter at room temperature."The lab report purportedly found "lard" and "fish oil" in the samples, with the report dated July 16, 2024, following the sample receipt on July 9.No official confirmation has been provided by the Andhra Pradesh government or the Tirumala Tirupati Devasthanams (TTD), which oversees the Sri Venkateswara Swamy temple.The lab involved is CALF (Centre for Analysis and Learning in Livestock & Food), a multidisciplinary laboratory under the NDDB (National Dairy Development Board) in Gujarat.Andhra Chief Minister Chandrababu Naidu accused the previous YSRCP government of using "substandard ingredients and animal fat in making Tirupati laddu." This allegation was vehemently denied by the YSR Congress Party.In June, the TDP government appointed senior IAS officer J Syamala Rao as the executive officer of TTD. An inquiry into the "poor quality, taste, and texture of the laddus" was launched. TTD constituted an expert committee, which included Dr B Surendranth, Bhaskar Reddy, Prof B Mahadevan, and Dr G Swarnalatha, to examine the quality of the prasadam.The committee sent ghee samples to NDDB, and the lab reports confirmed the "presence of foreign fats." Consequently, TTD returned the ghee supplied by AR Dairy Foods, blacklisted the contractor, and selected Karnataka Milk Federation as the new supplier.(With inputs from agencies)
